RECIPE: MUSHROOM MASALA/ MUSHROOM CURRY
Mushroom Masala/ Mushroom curry is an Indian style curry made with mushrooms, onion, tomatoes, spice mixture, herbs and a bit of cream or coconut milk. The flavorful, tasty and creamy curry is enjoyed with naan, paratha, roti or rice.
What is a Curry?
Before I lead you to the Mushroom Masala recipe, let us get one thing cleared and out of the way. Curry is a word coined during the British Rule in India. It originates from the Tamil word kari which means a sauce or relish for usually rice. Curry originates from the Indian Sub Continent. Although curry refers to both a dried or wet version of any dish prepared to enjoy with rice or flatbreads, the world generally knows it as meat, fish, vegetables, etc, cooked in a sauce base.
In India you may find the word curry on the menus but that is usually more for the tourists and foreigners sake. Most sauce based or dry curries will have specific names like pasanda, korma, mughlai, bhuna, etc. Though the basic ingredients onion, tomato, spices and herbs may be the same in the different varieties the difference will be in how it is cooked and sometimes the spice mixture or blend used.

More About Mushroom Masala
There are two ways one can prepare any Masala or basic curry. The main ingredient can be mixed vegetables, paneer, chicken, fish, meat or in this case mushrooms. The first way is to marinate the main ingredient in a yogurt or spice based marinade. Then the marinated ingredient is roasted and added to a curry or sauce base prepared separately.
The second method is to prepare the sauce or curry and add the main ingredient. Allow it to cook with the sauce or curry. I’ve chosen to make mushroom masala using this method. A masala is the most basic Indian sabji or sabzi that one can prepare in a matter of minutes.

Ingredients Required For Mushroom Masala
- Mushrooms – generally button mushrooms are used for this masala.However, can also use cremini mushrooms. Wipe the mushrooms well with a damp cloth. Cut into quarters or thick slices.
- Onion – white, yellow or red, peeled and chopped finely
- Garlic – peeled and minced
- Ginger – peeled and minced or grated
- Green Chillis – chopped finely or crushed
- Fresh Tomato Puree – or canned
- Oil – any vegetable oil
- Ghee – clarified butter – an optional ingredient. I like the aroma of ghee in curries. For vegan option use vegan ghee or coconut oil.
- Cashew Nut or Almond Powder
- Garam Masala – a spice mixture or blend that is easily available in stores.
- Turmeric Powder
- Asafetida – hing. Is an optional ingredient especially if you want a gluten free curry. Asafetida usually has a bit of wheat flour mixed in it.
- Salt – according to your taste
- Sugar – a little balances the flavours
- Kasuri Methi – dried fenugreek leaves. Adds a distinct flavour to the curry.
- Water – tap water
- Coconut Cream – can also use normal whipping or cooking cream
- For Vegan version don’t use ghee. Also use coconut cream.
- For Gluten Free version don’t add asafetida.
YOU TUBE CHANNEL:
- 250 g mushrooms
- 1 cup onion finely chopped
- 2 tbsp garlic minced
- 1 tsp ginger minced
- 1 tsp green chilli minced
- 1 tbsp oil
- 1 tbsp ghee or oil
- 2 tbsp cashew or almond powder
- 1 cup tomato puree
- 1 tsp garam masala
- ½ tsp turmeric powder
- ¼ tsp asafetida optional
- ½ tsp sugar
- 1 tsp salt
- 1 tbsp kasuri methi dried fenugreek leaves
- ¼ cup water
- ¼ cup coconut cream or cooking cream
- 3 tbsp fresh coriander chopped
- Heat oil and ghee in a wide pan over medium heat.
- When the oil becomes hot, add the chopped onion and stir fry till it becomes soft and slightly brownish.
- Add garlic paste and stir fry for a minute.
- Add ginger and chilli pastes. Stir fry for a few seconds.
- Add asafetida, turmeric powder and the cashew nut or almond powder. Stir fry for a few seconds.
- Add tomato puree, salt and sugar. Mix well. Cover the pan and allow the sauce to cook for at least 2-3 minutes.
- The sauce will be cooked by now. Add chopped mushrooms and garam masala.
- Mix well. Cover the pan and allow the mushrooms to cook for 5 -7 minutes. The mushroom will at this point release a bit of water. In between remember to stir the curry so that it does not stick to the bottom of the pan.
- Add water and kasuri methi. Mix well. Cover the pan again and let the masala cook for 2-3 minutes.
- Open the lid, mix the mushroom masala. Add coconut cream and mix well.
- Add chopped coriander and Mushroom Masala is ready to be served with rice, paratha, naan or roti.
- Adjust spices according to your taste.
- Can easily add sweet corn, peas, chickpeas, beans, paneer along with the mushrooms to make a different kind of masala.
- Can replace the nut powder with chickpea flour if you have nut allergies.
