When Sasmita who blogs at First Timer Cook was suggesting themes for #192, I wasn’t paying much attention as I thought I wouldn’t be able to participate. It was when I got back to my hotel in the evening and saw over 50 messages on the group’s WhatsApp, is when I began reading them out of curiosity. With One Spice Ingredient as the chosen theme, I immediately remembered that I had a recipe in the draft that fits the bill. I was about to post this recipe for the minicake theme but changed my mind. I now know why this one got saved.

Apple and Cinnamon are undoubtedly the best combination when it comes to bakes and desserts and even apple drinks. When I baked the muffins it was not to use up the apples or anything of that sort. You’ll probably laugh if I told you why I baked the muffins. I had run out of cinnamon so the next trip to my favorite Indian grocery store in Mombasa, Indian’a Spices, I saw these really long curled up cinnamon sticks. Usually we get the broken sticks but these were whole. I immediately bought the packet. On opening the packet, the cinnamon smelt heavenly. Immediately I thought of apples and cinnamon and thus this recipe.
 
I think as bloggers we go crazy with spices and exotic food items. Every time I pass a fresh produce market or shops selling dried fruits, spices, nuts, hubby takes hold of my hand and pulls me towards another direction ever so fast. If it were up to me my suitcase would be full of these food items.
 
When I baked these muffins with freshly ground cinnamon, the whole house smelt amazing. I truly believe that to get the best out of a spice, its best to use them when they are fresh and if one requires to use it the powdered form then make very small batches of ground spice. After a while the aroma and flavor tend to disappear.
 

Cinnamon is a spice that is made from the inner bark of trees scientifically known as Cinnamomum. It has been used as an ingredient throughout history, dating back as far as Ancient Egypt. It used to be rare and valuable and was regarded as a gift fit for kings. Branches of these trees are cut and the outer bark is removed. Its then beaten repeatedly to remove the inner bark. The inner barks come out as thin rolls called quills. These are dried and sold. The main flavor of the cinnamon spice is from essential oil and principal component, cinnamaldehyde. Nowadays cinnamon is widely used in bakes, desserts, spice mixtures, drinks and local authentic dishes.

 
 
Did you that there are four types of cinnamon?
 
  • Cinnamon Zeylanicum also known as Ceylon Cinnamon, True Cinnamon, Mexican Cinnamon or Cinnamomum Verum. Its mainly grown in Sri Lanka, India, Madagascar, Brazil and the Caribbean. The trees grow up to 32 to 49 feet high. It tastes mildly sweet and is light to medium reddish brown in colour.It has low coumarin levels and is quite expensive.
  • Cinnamon Burmanni also known as Korintje Cinnamon, Padang Cassia, Indonesian cinnamon. Its mainly grown in Indonesia. The tree grows to a height of 22ft and its spicy dark reddish brown bark. Not too expensive and it has high coumarin levels.
  • Cinnamomum Loureiroi also known as Saigon cinnamon, Vietnamese cassia, Vietnamese cinnamon. Found mainly in Vietnam it tastes spicy sweet and is dark reddish brown.It has high oil content. It has high coumarin levels.
  • Cinnamomum Aromaticum also known as Cassia Cinnamon or Chinese Cinnamon. It mainly grows in China, with the tree height being 32-49 feet high. It has a spicy bitter taste, is dark reddish in colour and not expensive.

Many people are consuming cinnamon either with hot honey and lemon water, sprinkled in oats and cereals or used in dishes. If you consume cinnamon on a daily basis then for health reasons its best to buy the one with low coumarin levels. Too much coumarin is not good for health.

APPLE AND CINNAMON MUFFINS
Makes 12

 
1½ cups finely diced apples (approx 2 apples)
2 tbsp plain flour
1 tsp cinnamon powder
½ cup mashed ripe banana
½ cup milk
  cup oil
1 tsp vanilla extract
¾ cup sugar
1 cup plain flour (all purpose flour)
2 tsp baking powder
¼ tsp salt

For topping:
¼ cup diced apples
½ tsp cinnamon for sprinkling

  1. Preheat the oven to 180°C.
  2. Line a muffin tray with cake cups.
  3. Mix 1½ cups diced apples with 2 tbsp flour and 1 tsp cinnamon. Leave on the side till required.
  4. Sift flour, baking powder and salt together in a bowl.
  5. In another bowl whisk mashed banana, vanilla extract, sugar, oil and milk together.
  6. Add the dry ingredients to the wet ingredients and mix just enough to wet the dry ingredients.
  7. Add the apple cinnamon mixture. Mix gently.
  8. Spoon the batter ¾ of the way into the prepared muffin tray.
  9. Top each muffin with some chopped apples.
  10. Sprinkle cinnamon powder.
  11. Bake for 20-25 minutes or till the tops are golden brown.
  12. Insert a tooth pick into the muffin. If it comes out clean then the muffins are done.
  13. Let them cool on a wire rack.
  14. Serve with tea or coffee or as a breakfast treat.

Tips:

  • Use any apples of your choice.
  • Grind the cinnamon freshly for best aroma and flavor.
  • If you don’t want the banana taste in the muffins then replace it with 2 medium eggs. Usually ¼ cup mashed banana is equal to one egg.
  • Can use half plain and half wheat flour.

    Apple and cinnamon is a classic combination that can be used in cakes, breads and rolls.. these are so well baked with a lovely texture. and I agree with you as a blogger and foodie we do get curious and crazy especially in a foodstore .. my kids have requested me to visit food stores on my own as I get lost in such stores and take a lot of time in searching or just looking at the stuff:)!!

    Lol! I know the pull of the market is so very heady. I will carry a few less clothes just so that I have space later.

    Though cinnamon is not my spice I can imagine the aroma n the freshly ground cinnamon must be amazing. Love these muffins apples n bananas in combo will be so very delicious.
