   Do any of you have days when you just can’t get any good ideas for food styling? Do you look at the photos after a few days and think ‘what sort of picture have I taken?’ Or sometimes are you so pressed for time that you take pictures in a hurry and then later on realize they are so bad but now the food has gone down everyones tummy? That recently happened to me and now when I look at the picture, its so so bad. I have two options, either just use that picture or make the dish again and take a better picture before its time to post the recipe. 
   
   Anyway, I think we all have our days. In this competitive world we have to compete with excellent styled food pictures against good recipes. There have been times when I’ve tried out a recipe from other sites and blogs and they have been disasters but the pictures are what we all call drool worthy! 
Oh well, styling food is part practice and part artistic talent. Food styling comes so easily to my daughter. Her other pictures too are good. She has an eye for it.

   We’re already into Day 20 and today’s breakfast is a Tomato Omelette from ARMENIA. This is not the usual omelette where one adds chopped tomatoes to the egg. Its different and tastes good and is a hearty meal. Sometimes along with the tomatoes some minced meat is added. Its easy to make and I added my own homemade tomato sauce and coriander to it as I didn’t have fresh basil. This preparation is a bit like shakshuka but the difference is that instead of adding whole egg to the stir fried vegetables, here the eggs are first whisked and then added.



TOMATO OMELETTE 
Serves 2

1 onion, diced or sliced
1-2  tomatoes, diced
½ cup homemade thick tomato sauce
3-4 cloves of garlic, finely chopped
½ cup sweet bell pepper, diced
4 eggs
½ – ¾ tsp salt
1tsp pepper powder
2 tbsp fresh coriander, chopped
1 tbsp olive oil

  1. Heat oil in a wide pan over medium heat.
  2. Add chopped onion and stir fry till a bit soft.
  3. Add the chopped garlic, tomatoes and sweet bell pepper.
  4. Stri fry till the peppers are soft.
  5. Add salt and the homemade tomato sauce.
  6. Cook the mixture till all the water from the sauce evaporates.
  7. In the meantime whisk the eggs in a jug.
  8. Pour the whisked eggs over the tomato sauce.
  9. Cover the pan with a lid and let the egg cook till done.
  10. Sprinkle pepper powder and chopped coriander over the omelette.
  11. Serve with bread and butter.
Tips:
  • To make homemade tomato sauce or puree, dip the tomatoes in hot water. Leave for a few minutes. Peel off the skin. Puree the tomatoes. At this point you can leave it as it is or make it into a pizza like sauce with onions, garlic and seasoning.
  • For a firm omelette cook for a long time and for a soft omelette, cook for less time.

    I have added tomatoes in egg podimas, but never tried it in omelette. This is an interesting recipe, will give it a try on sometime. Yes, you’re right, we all had our days and seriously i’m struggling with good styled photos on each day.

      Sandhiya I too was surprised how good the tomato omelette tasted. Usually just add a small chopped tomato to the omelette.

    Wow, Armenian omelette rocks, adding tomatoes makes the simple omelette to a delightful breakfast na. Eventhough i add tomatoes and onions in my omelette, i would love to give a try to this Armenina tomato omelette soon.

      Priya though we add chopped tomatoes to the omelette in this recipe the tomatoes are cooked till it becomes like a sauce and I added some homemade tomato sauce too. Its really delicious and you could add spices according to your taste.

    I think I personally am with peace with the pics I take,; Yes, there are a zillion pics out there which are better shot, better lit. But personally I think I am improving and thats a beautiful place to be 🙂 sorry for the rant…
    These omelettes are fabulous , I make them with besan to replace the eggs

      Not a problem at all, at least as bloggers we try and improve ourselves in photography, cooking and also writing better text and grammar.

    This happens with every food blogger. We are never satisfied with the photos we take. This variation of omelette sounds wonderful. I have been looking for various ways of consuming eggs as it gets boring after a few days. Will try this version..

    Sounds interesting and perhaps different than the routine . Well can’t say much on it , but the eggetarians will definitely enjoy it .

    That is such a yummy looking omelette. I would LOVE to try it out some time for my family. I think this kind of an omelette exists in all cuisines. My Turkish friend made a version of it and my Chinese friend also made a version. I love your Armenian version.

    I love the vegan version of this tomato omelette made with besan, makes a very healthy and filling breakfast.

    Can totally relate to you! Most of my pics are taken in a hurry without styling them much and it looks ok for that moment but later after a few months,I am like – Did I really take such a bad pic!.Anyways , this dish seems to be a really hearty breakfast!

    EVery food blogger has this feel mayuri, but i feel this is what makes us improve, that self criticism is what brings the best in us!!!
    Tomato omelette looks very colorful and flavors sounds so different from the regular omelette!
