611. Baked Bread Pudding
Let me introduce you to my first guest on Mayuri’s Jikoni. Its none other than my lovely, warmhearted and ever friendly daughter Namrata. A textile designer by profession but now a Content Writer, don’t ask me to name the number and names of firms that she has worked for. How did she become a Content Writer? Well its her blog Namrata Noted that caught the eye of the Content writing world. She writes about everything from travel stories, to food she has prepared to her personal experiences. I love reading her blog not only because she is my daughter but more so because of her style of writing, easy flowing, humorous and engrossing. When I asked her to be my first guest she was thrilled. Nami as I call her is a pretty good cook herself, she’s got her own style and rest assured no one will walk out of her home hungry. She has also gone to lengths to make theplas and khichdis for the many baas and dada that have stayed at home with her. Her recipe on Easy Peasy Condensed Milk sort of lit up my brains like a 100W bulb. Why don’t I get my family and friends to be guests on my blog. They all cook for their families and friends and have some recipes that are specifically so associated with them.
So, I thought about it for a while and decided to do an easy recipe that’s quick to follow along with and still makes for a delicious recipe to note. Something as humble as a baked bread pudding should make the cut. And it’s safe to say, the end result is awesome and hopefully worthy enough to make it to her list.
- 5 slices of brown bread cut into small squares
- 2 eggs
- 1 tbsp of honey
- 1 tsp of cinnamon
- 1 tsp of baking powder
- 1/3 cup warm water
- pinch of salt
- cherries for topping
- powdered sugar for topping
- Whisk together the warm water, eggs, honey, cinnamon powder,baking powder and salt.
- Soak in the bread squares into this mixture and let is rest for 20 mins.
- In the meantime, preheat the oven to 180C and patiently wait.
- Pour the bread mixture into a baking dish and top it off with cherries.
- Pop it into the oven, let it bake for an hour and watch it fluff up.
- Once done, sprinkle it generously with the powdered sugar.

Its lovely to know so much about your daughter, its even nicer to read that she shares your cooking passion. The recipe looks fab and the photos are mouthwatering. I am now heading over Namrata's blog to check it out.
