For this theme the members decided to get out of their comfort zone and try their hands at something challenging. After much discussion bread was the chosen topic. Some members love baking bread while others are just not comfortable using yeast. So the theme was breads that are made with yeast, soda or quick ones. As my past few posts have been sweet bread ones, I decided to go the savoury way.

MINI GARLIC AND CHILLI PULL APART BREAD

I’ve been wanting to make pull apart bread since I’ve seen quite a few photos on Pinterest. However, most of the ones I’d seen all use ready made biscuits to make the pull apart bread. That is one thing I don’t get here in Mombasa. As a result decided to use the technique with normal yeast dough. I made mini ones so that I could share the bread with my neighbor.

The reason I came up with garlic and chilli flavours for this pull apart bread is because my dad loves chillis and so did my father in law.Hats off to all the Fathers (Daddies, Papas, Dadas) out there. When a child is born most Mums are able to stay at home to nurture their kids. Naturally, they become more attached to the mums than dads. Fathers have no choice but to go out and earn so that the family can be comfortable. I was able to spend lot of time with my kids in their formative years while my husband worked hard to provide for us.

My dad has and is my ardent supporter and listener. He is like a Rock of Gibraltar, always there in times of sorrow and happiness. I learn from him, value for family, being there for all, how to be more organised.

Remembering my father in law too, miss him so much. He provided us with valuable support, advise and had a wonderful sense of humour.

MISSED FLIGHT MEMORIES….

There was a lot drama involved in catching our flight to Montreal. Our flight was on Friday 17 June from Nairobi to Doha and from there to Montreal. So the whole schedule was stuck in my head as leaving Friday night and reaching Montreal on Sat afternoon. By Thur night we had packed, planned Friday lunch in such a way that I would use up the last bits of veggies left. Usually, when I have to fly and close down the house, I get a bit restless and cannot sleep. Thursday night was no different.

After midnight my hubby’s phone rings. It’s one of those basic Nokia ones so the longer it rings the louder it gets. Hubby was snoring away to dreamland, while I was reading. Initially,I just wanted to ignore the call and then several unpleasant thoughts flashed in a second in my mind… is it from India, is it from UK, from Dubai, are all well? So, I rushed to pick the phone.

“Hello,” I answered.

“Hello, is that Doctor Patel?” the man at the other end asked.

“No, but I’m his wife.” I replied with a bit of irritation as I thought this was a prank call.

“Dr. Patel is sleeping can I help you?” I asked.

“Isn’t he going to fly by Qatar Airways today?” asked the man.

“Yes, but tonight”. I replied

“No mam he has to be here now as the flight is at one.” he informed me.

And my mind just went blank as I realized the blunder. 1 am is Friday morning and not Friday night.

My palms started sweating and my eyes wide open. Panic written all over my face. Here, hubby is sleeping and we are still in Mombasa. How can we be at the Nairobi airport in half an hour.

The man must have realized that I panicked so he advised me to call the Qatar Airways office at 08.30 and they would help me out.

I didn’t sleep the whole night as it is the first time, we have missed a flight because we got the time of day wrong. However, we did get the flight re booked and travelled the following day. The lady who re – booked our flights reminded me thrice on the phone that I should be at the Jomo Kenyatta Airport at 10p.m on Saturday and even sent an email.

I don’t think we are ever going to presume 1 a.m. is night ever again.

 DOHA AIRPORT

It’s the biggest one I have seen so far. Comparatively, Nairobi and Mombasa are like mini airports. Orientation at airports especially when its your first visit gets more difficult. Scared of losing our connecting flight, we had to rush from one gate to the other. As we were walking really fast to the gate, I wished hubby Happy Father’s Day and he just ignored me. (Yes he was mad at me for us missing the flight!). In all this madness didn’t even get time to call my dad.

MONTREAL

Finally reached Montreal. As I am writing this post at 9a.m. its really hot. Yes, summer heat is on full blast! Hubby wants to get out of the house and go for a walk, I want to finish this post and clear my bachelor son’s kitchen.

INGREDIENTS REQUIRED FOR MINI GARLIC AND CHILLI PULL APART BREAD

  • Flours – I’ve used both whole wheat and plain flour (all purpose flour)
  • Instant dry active yeast – if you don’t have the instant one, you can use active dried yeast. Just allow it to ferment in the measured warm milk with sugar added to it for 10 minutes.
  • Salt – seas salt, normal salt, pink salt, your choice
  • Sugar – a little sugar is required to activate the yeast. Can use honey instead.
  • Milk – For a softer bread. If you want to make a vegan version replace it with any nut milk or water.
  • Butter – replace it with oil for a vegan version. Need for adding to the bread dough and also for making the dipping mixture.
  • Fresh Garlic – peeled and minced or grated
  • Fresh Green Chillis – wash, remove the stalk and mince. 1-2 are enough.
  • Dried Herbs – I used both parsley and oregano. You can use any herb of your choice.

Dietary Tip:

  • Not Gluten Free
  • For a Vegan version replace milk with water or any nut milk and replace butter with oil or a vegan butter.

MINI GARLIC AND CHILLI PULL APART BREAD

Cute little mini pull apart bread with a hint of chilli flavor with the taste and aroma of garlic. Perfect accompaniment for a soup or stew
Prep Time 20 minutes
Cook Time 20 minutes
RESTING TIME 3 hours
Total Time 3 hours 40 minutes
Course Side Dish
Servings 12 PIECES

Ingredients
  

FOR THE DOUGH:

  • 2 cups whole wheat flour
  • 1 cup plain flour( all purpose flour)
  • 2 tsp instant dry active yeast
  • 1 tsp salt
  • ½ tsp sugar
  • 1- 1¼ cup warm milk
  • 2 tbsp soft butter

FOR THE DIPPING MIXTURE:

  • 100 g butter, salted
  • 4-6 cloves garlic peeled and minced
  • 1-2 green chillis minced
  • ½ tsp dried parsley
  • ½ tsp dried oregano

FOR SPRINKLING ON TOP:

  • little sea salt

EXTRA

  • flour for dusting
  • oil or butter for greasing

Instructions
 

PREPARATION OF THE DOUGH:

  •  Mix the flours, yeast, salt and sugar in a big bowl.
  •  Add butter and rub into the flour.
  •  Add milk and form a dough which is not too stiff or sticky.
  • Dust the worktop with some flour.
  • Knead the dough on the worktop till its smooth and elastic. This will take about 10-15 minutes by hand and 7-10 minutes by machine.
  • Grease the bowl lightly with oil or butter
  • Roll the dough into a ball shape.
  • Put in it the greased bowl. Cover it with a tea towel or cling film.
  •  Let the dough rise till its double the size. This will take about 1-1½ hours.

PREPARATION OF THE DIPPING MIXTURE

  • Melt the butter
  • Add the other ingredients and mix well. 
  • Keep it on the side till required

SHAPING THE MINI PULL APART BREAD

  • Keep a muffin tray ready, greased with butter or oil.
  • Deflate the risen dough gently.
  • Dust the worktop lightly with flour.
  • Remove the dough out onto the worktop.
  • Shape the dough into a rough log. 
  • Cut the dough into 12 equal parts.
  • Roll each part into a ball and flatten slightly.
  • Cut it into five rough pieces. 
  • Dip each piece in the dipping mixture and stack it the cup of the muffin tray.
  • Repeat steps 7 to 9 with the remaining dough.
  • Pour the remaining dipping mixture over the stacked pieces equally.
  • Sprinkle the top sparingly with sea salt.
  • Let the dough rise for 45 minutes to an hour.

BAKING 

  • Preheat the oven to 180°C.
  • Bake the bread in the oven for 15-20 minutes or till the tops are light golden brown in colour.
  • Remove the muffin tray from the oven.
  • Carefully remove the mini bread from the tray and place it on a wire rack to cool a bit.
  • Serve warm Mini Garlic and Chilli Pull Apart bread with a curry, soup or stew.

TIPS:

  • Can mix half butter and olive oil for the dipping.
  • Use herbs of your choice.
  • Sprinkle the baked bread with parmesan cheese or red chilli flakes before serving.

    I so feel you. We too have done the same once flying from benagluru to singapore airlines. By god hated every minute of it, now double check the timings so many times.
