Recipe: Tricolour Chaas
Tricolour Chaas is a very healthy cooling drink made from yogurt, carrot, spinach, garlic, ginger, cuucmber. The orange and green colour are all from natural food colours. I’ve used carrot for the orange colour and spinach cucumber for the green. No artificial colours are added. Come on, let us celebrate India’s Republic Day or Independence Day with some healthy, naturally coloured, cooling drink.

What is Chaas?
Chaas is a yogurt based drink that is very popular in the Indian Sub Continent. Also known as majjiga in Telegu, moru in Tamil, majjige in Kannada, it is a common drink served with any meal. Usually chaas is more watery compared to lassi. Lassi tends to be thick and can be sweet or salty. Generally chaas is salty. Depending on the ingredients you add, chaas taste and flavour will vary. Whenever you hear the word buttermilk in India, it usually refers to chaas.
In the villages, especially families that own cows and buffalos, chaas is made from buttermilk. After churning the fat from milk for butter, the leftover liquid is usually consumed as a healthy drink.
In the cities we tend to make chaas with yogurt and water. Hubby and I love to have Vaghareli Chaas every day. It is our favourite.

Memories – Dubai Trip 2014
Before we go into how to make this cooling, nutritious chaas, let me tell you a bit about my trip to Dubai. Our trip to Dubai in December was a fun, relaxing and an enjoyable experience. Meeting up with family is always a happy affair but leaving them equally sad. We got to spend a lot of time with my daughter in law’s parents and her brother. My son and daughter in law would meet us in the evenings. It was my hubby’s first trip to Dubai. He was amazed at the number of lanes on the highway, the cleanliness, security and the parks.
What baffled us was how green the parks are. What struck me was that the rest of the world is cutting down its trees mindlessly and here people are making an effort to grow trees in a desert. Lovely sunsets, walking on the beach, The Walk, the malls, the souks, all a wonderful experience. I loved the Ibn Battuta mall, visited the Atlantis, and the fountain show made my day as it played the song Dhoom Tana. Bollywood song in Dubai… enjoyed it thoroughly.
Different cuisines to try out, some days we cooked a light meal in our hotel apartment. Even the small supermarket near the hotel was well stocked. Ladurée macarons and Iraqi tea in Dubai. Delicious Arabian desserts, Indian meals, Lebanese meals, mega size pizzas, Starbucks hot chocolate, haagen dazs ice cream, the list is endless. Where can you get all this in one place? Dubai it is.
Ingredients Required For Tricolour Chaas
Plain Yogurt
Use plain yogurt that is not too sour. Also make sure it is not watery. If it is then you can adjust the amount of water you add.
Water
Plain tap water will be required to make the white chaas and maybe to add a little to the cooked carrot to puree it.
Salt
Add normal table salt or Himalayan Pink Salt. Can also use rock salt (sendha namak) if you want to.
Cumin Powder
Also known as jeera powder. To add some to the white chaas. For full flavour, best to crush roasted cumin seeds freshly.
Carrot
Peel and boil one small carrot. Puree the boiled carrot to a smooth texture for the orange|saffron chaas.
Fresh Ginger
I have added a bit of fresh ginger minced to the orange or saffron chaas as carrot and ginger together taste good. If you don’t want to add ginger, add some cumin or black pepper powder.
Spinach
Need a few leaves for the green chaas. I usually use raw but if you don’t like the flavour of raw spinach then cook them a bit.
Cucumber
I use English cucumber so that I don’t have to peel it. The peel adds the green colour to the chaas.
Garlic
I add one small clove of garlic for flavour. If you don’t want to use garlic then add some cumin or black pepper powder. But trust me, that hint of garlic in chaas tastes really good.

TRICOLOUR CHAAS
Ingredients
FOR WHITE CHAAS
- ¾ cup plain yogurt thick
- ¼ cup cold water
- ¼ tsp salt
- ¼ tsp cumin powder
FOR THE ORANGE CHAAS
- ½ cup plain yogurt thick
- ½ cup carrot puree cooked and pureed
- ¼ cup cold water
- ½ tsp ginger paste
- ¼ tsp salt
FOR THE GREEN CHAAS
- ½ cup plain yogurt thick
- 1 cup spinach leaves
- 1 small cucumber diced, about ½ cup
- 1 clove garlic small
- ¼ tsp salt
Instructions
PREPARATION OF WHITE CHAAS
- Add all the ingredients in a big jug or bowl.
- Whisk to a smooth consistency using a hand whisk.
- Chill it for at least 30 minutes before serving. Or serve immediately.
PREPARATION OF ORANGE CHAAS
- Peel and cut a small carrot into slices or chunks. Steam or boil it till it is done.
- Puree it in a blender to a smooth consistency. If need be add very little water as you need a thick carrot puree.
- Add all the ingredients and ½ cup carrot puree.
- Whisk with a hand whisk.
- Chill it for at least 30 minutes before serving. Or serve immediately.
- If you leftover carrot puree use it to make roti, rava idli, smoothie, etc. Or store it in the fridge in a jar to make carrot chaas again.
PREPARATION OF GREEN CHAAS
- Puree spinach, cucumber and garlic in a blender to a smooth consistency.
- I have used raw spinach leaves but you can blanch or cook them a bit if you want to.
- Add all the ingredients including ½ cup of the cucumber spinach puree.
- Whisk with a hand whisk.
- Chill it for at least 30 minutes before serving. Or serve immediately.
- Any leftover cucumber spinach puree can be used again to make more green chaas or add to a dough to make roti, or in a smoothie or add in a rava idli batter.
Notes
- Make sure you use thick plain yogurt and it is not too sour.
- Any leftover carrot or cucumber spinach puree can be added to a paratha, roti dough. Or add it in a smoothie. Or use it up in a rava idli batter.
- Adjust spices according to your preference.
- Blending chaas in a blender, results in curdled milk breaking down completely and sometimes results in a watery chaas. Best to whisk using a hand whisk.

It’s nice to know that you had a great time in Dubai. Chaas has been our most sought-after drink in summer in India as well as Dubai or wherever we maybe globally trotting. The urge for Chaas intensifies with soaring temperatures. Would love to try out these Colourful chaas. Interesting ideas with natural food colours.
