RECIPE: THANDAI MOUSSE
Looking for an easy dessert to make for the upcoming Holi festival? Try out Thandai Mousse – light, smooth and melt in the mouth kind of dessert. Did I mention it is so easy to make it? Yes, it is. Make it a day ahead and serve it as a cooling treat to your friends and family.
What is a Mousse?
In the culinary world a mousse is a light and smooth mass in which the main ingredient is cream or egg white or both. Mousse is the French word for foam. Mousse has a melt in the mouth kind of texture and can be sweet or savory. While I’ve not tasted the savory one, I love to make the sweet especially when I have guests over for a meal. One can make a mousse with pureed fruit, coffee, chocolate, caramel, flavourings like vanilla, saffron, herbs or spices. Generally savory ones are made from meat, fish, cheese or vegetables.
What are the main ingredients in a Mousse?
As I mentioned above egg white or cream is the most important ingredient. Both are whipped till they become light and airy.
Need gelatin or any other setting agent like vegetarian gelatin or agar agar.
Depending on the kind of mousse you’re making you need those ingredients e.g. for chocolate one you will need either chocolate or cocoa powder.

It’s a sweet treat
Hot weather usually means cold treats. Celebration time means sweet treat. Pamper me time means indulgence. Usually one cannot indulge in a curry or roti or rice. Whatever the reason, sweets and desserts are always a welcome treat.

Memories – Pre – Wedding Celebrations
According to the Indian Tradition, the day one begins to write Wedding Invitations, family and friends get invited for a meal and usually some Indian sweet like laddoos, barfi, etc are served. To begin the celebration of writing invites for my eldest son’s wedding, I had to think of something to make to serve my guests. As the weather is just too hot for any heavy sweets, I decided to make a light creamy Thandai Mousse instead. As my hubby’s aunt doesn’t eat gelatin and I couldn’t find agar agar in the shops, I used chia seed powder and it worked like a charm.
Also with Holi just round the corner, I thought that Thandai Mousse is an apt dessert.
What is Thandai?
Thandai is actually the name of the cool drink usually served during the Holi Festival and also the name of the syrup or spice powder that is added to the drink. All the ingredients used to make the syrup or spice powder have cooking properties.
What else can you use the Thandai Spice Powder or Syrup for?
Besides making the traditional Thandai Drink, I like to add the Thandai spice powder to make Thandai Muffins as kids love them during the festivals. Thandai Cookies are baked to give away as gifts to friends and family. I usually tend to keep Thandai Kulfi ready in my freezer for unexpected guests that may turn up after the festivities. Feel like having a different flavored chia pudding, then why not try out Thandai Chia Pudding. Malpua or sweet pancakes are generally made during Holi. If I need to make them for any occasion I love to make the fusion type Thandai Malpua with Strawberry Compote.
Ingredients you need for Thandai Mousse
- Chia Seed Powder as many of my guests don’t eat gelatin. If you want to use agar agar powder then use 2 tsp. Heat half of the milk, add agar agar and stir till it melts. Add to the rest of the milk.
- Fresh milk
- Thandai Spice Powder
- Fresh Whipping Cream
- Chopped Nuts of your choice
- Sweetener of your choice, sugar, honey, stevia, etc. If you are using stevia, 1-1½ tsp is enough. However, add according to your taste.
- Gluten Free
- Diabetic Friendly
- Satvik friendly
- 1 cup fresh milk
- 1 cup whipping cream
- 6 tbsp chia seed powder
- 2 - 2½ tsp powdered sugar
- 2 tbsp Thandai Spice Powder
- 2-3 tbsp chopped nuts
- few strands of saffron optional
- Or add fresh fruit.
- Add powdered sugar to the whipping cream and whip it till it forms soft peaks.
- Add milk, thandai spice powder and chia seed powder.
- Whip again for a few seconds.
- Pour the mixture into serving bowls or glasses.
- Let it chill overnight or for 3-4 hours in the fridge.
- Serve chilled topped with chopped nuts, saffron, or fresh fruits.
- Want to use agar agar, then you need to heat ½ cup milk and add 2 tsp agar agar powder. Mix well, add to the cold milk. Add the milk to the whipped cream.
- Replace sugar with honey, maple syrup or stevia. Add according to your taste.

- For parties, you can set the mousse in small glasses or cups. You'll be able to make 6 -7 following the above recipe.

what a luscious and creamy dessert. I have made thandai before but by making thandai syrup. The masala powder seems more versatile and I have to try this method soon so I can make other thandai flavored treats

I am loving this easy and quick mousse, only issue is sourcing edible rose petals, which I will try online. Love your thandai masala powder recipe and the mousse. Absolutely irresistible.

Thanks Renu, it is an easy recipe. If you don’t get edible rose petals try it without them. If you still want the rose flavour add rose extract.

Thandai and Holi are synonyms. It’s a great idea to make Thandai mousse as days are getting hotter here in this part of the world.

I admire the variety of recipes with thandai that you have on your blog. Coincidentally I was running out of stock of agar agar for making mousse. Your recipe was a savior since it doesn’t use agar agar. This Thandai mousse came out awesome. Will make it again soon.

I grew up in North and have tasted Thandai but I have never made it myself. Loved the recipe for thandai masala and this is such a fun fusion recipe to make for Holi. I used chia seed powder and loved the added healthy benefit as well.
