Recipe: Guacamole Salad

Guacamole Salad is an easy to make, delicious, healthy salad that has all the components of guacamole. Enjoy it as a side dish with your Mexican food or as a light meal option. Best part is that you can customize this salad to your liking.  You may think, why have the salad when you can have the guacamole? Well, can’t imagine enjoy guacamole as a meal. But all the ingredients that go into in a salad form, definitely enjoyable.

What Is Guacamole?

Also known as guac for short, it is a condiment. Most of us know it as a dip made of avocado with a  bit of onion, lime, cilantro (fresh coriander) and jalapeño. Some versions also add chopped tomato, garlic and sour cream. It is usually served with Mexican food as a sauce, spread or dip.

Memories

Early sixties and seventies were when kids played outside their homes without any fences and gates without any fear. The playground would mostly extend onto the road, to the gardens of neighbours, homes of friends. I can’t remember my mum or grandmother having to sit out and keep an eye on us. We didn’t need to ask them if we could go to our neighbour’s or friends homes. The rules were no fighting and come home by 6p.m. One of our neighbour had a few avocado trees in their garden. Undeniably, snacking on those avocados was a must. While a few kids didn’t like the creamy, bland taste, I loved avocado. Sometimes we’d run back home, get a mixture of salt and pepper and enjoy the creamy fruit. Back then, had no idea that avocados play a huge role in the Mexican food.

Fast forward to today, I am still a huge fan of avocado. They have become a bit expensive, but I’d rather sacrifice a chocolate or packet of chips for some avocados.

For this challenge, the tussle was between a grape cake and guacamole salad. But obvious, the healthier dish won. Not that I regret it, love avocados.

Some Add-On For Guacamole Salad

  •  Lettuce leaves torn into pieces
  • Serve With Tortilla Chips
  •  Cooked beans, corn
  • Chopped spring onion
  •  Cheese sound good

Ingredients Required For Guacamole Salad & Coriander Lime Dressing

Avocado

2 medium ones. Cut into half, remove the seed and peel. Cut into slices or chunks. Add 1 tsp lime juice and toss gently. This prevents the avocados from turning brown.

Baby Tomatoes

Can be cherry, plum. Cut them into halves. If you don’t have baby tomatoes then use 2 -3 normal plum tomatoes. Cut them into chunks.

Onion

For this salad preferably red onion. However, add any you have. Slice the onion or chop it finely.

Jalapeño

Can cut into slices or chop it up finely.

Spring Onion

Chop it finely.

Cheese

Cotija cheese or feta. Cut or crumble the cheese. Optional ingredient. Omit if you want to prepare a vegan salad.

Lime Juice

Require some to add to the chopped avocados and for the salad dressing.

Fresh Coriander/Cilantro

Chop the coriander finely. If the stems are tender add them as they tend to be flavorful.

Olive Oil

Or any oil of your choice for the dressing.

Garlic

One large clove or about ¼ tsp minced. Chop or mince the garlic after peeling it.

Sweetener

Add little maple syrup or honey to balance the flavours. Alternately can add sugar.

Salt

I have used sea salt. Can use any salt of your preference. Add according to your taste.

Black Pepper

Freshly cracked is the best if possible.

GUACAMOLE SALAD WITH  CORIANDER LIME DRESSING

Ingredients
  

FOR THE SALAD

  • 2 medium avocados
  • 1 cup baby tomatoes
  • 1 small red onion
  • 1 jalapeño
  • ¼ cup spring onion chopped
  • 2 tbsp feta chopped or crumbled
  • 1 tsp lime juice

CORIANDER LIME DRESSING

  • 1 clove garlic finely chopped
  • ¼ cup fresh coriander finely chopped
  • 2 tbsp lime juice
  • 4 tbsp olive oil
  • ½ tsp sea salt
  • 1 tsp maple syrup/honey
  • ¼ tsp pepper coarsely ground

Instructions
 

PREPARE THE GUACAMOLE SALAD

  • Cut the avocado into chunks or slices after peeling it.
  • Add about 1 tsp of lime juice to it to prevent it from turning dark.
  • Cut the tomatoes into halves.
  • Peel and slice the onion. About ¼ cup is enough. But can add more if you want to.
  • Chop the jalapeño. I prefer to chop it into small pieces.
  • Chop the spring onion.
  • Mix all the ingredients.
  • Chill the salad in the fridge for 30-60 minutes.

PREPARE THE CORIANDER LIME DRESSING

  • Chop the coriander as finely as possible.
  • Peel and mince the clove of garlic or chop it up finely.
  • Whisk all the ingredients for the dressing in a small bowl or jug.

TO SERVE

  • Here you have two options. Add the salad dressing and toss the salad. Serve topped with feta which is chopped up finely.
  • Alternately, serve the coriander lime dressing on the side.

Notes

Add cooked sweet corn, red or black beans if you like.
Add jalapeño according to your taste.
If you don't get any cherry, plum or grape tomatoes use normal tomatoes. Just cut them into chunks
Add torn lettuce leaves.
Adding feta is optional.
