Recipe: Beetroot Chocolate Chip Cookies
Beetroot Chocolate Chip Cookies are egg free, so pretty, tasty, crispy on the outside and soft inside. Loaded with oats and chocolate chunks, the beetroot doesn’t as such add any flavour but makes the cookies soft pink in colour. Better to use natural colours than artificial ones.

In the whirlwind of hectic schedules and daily grind, we can turn into autopilot mode, forgetting the little gestures and favors that make relationships sparkle. So, why not embrace Valentine’s Day, sprinkle some magic to make it special, and shout out “I Love You” loud and clear for all eternity!
Sharing This Recipe With Foodies_ Redoing Old Posts
As I was going through some of my old posts, I realized that most of my Valentine’s Day recipes are old and need updating. Cannot do them all at one go. Once Valentine’s Day passes by, I forget. But this time, some leftover beetroot puree beckoned me to redo my Beetroot Chocolate Chip Cookies. Perfect as Valentine’s Day is round the corner . I had first posted the recipe on my blog on 13/02/2014. Updating it with better photos and write up on 09/02/2024. This time I decided to use up Lindt 80% dark chocolate I had. It actually paired well with the rest of ingredients as it balanced out the sweetness from the sugars used.
Some Recipe Ideas To Celebrate Valentine’s Day
Ingredients Required For Beetroot Chocolate Chip Cookies
Beetroot
I prefer to use cooked and pureed beetroot. In fact, I have not used grated raw beetroot so cannot comment on how the cookies would turn out. Generally, I store some beetroot puree in the freezer to use in various recipes like Beetroot Ammini Kozhukkatai. I either boil or bake the beetroot, peel it and then puree it in the food processor with little water. Don’t use Store bought ready cooked beetroot as it contains vinegar. Unless you find one without vinegar.
Flour
I prefer to use all purpose or plain flour to get that lovely soft pink colour. Wheat flour has the tendency to alter the colour. If you don’t mind dullish pink colour than by all means use wheat flour.
Oats
I use regular quick cooking rolled oats. Steel cut oats will soak up too much moisture, making the cookies dry and hard.
Butter
I have used salted butter. If you use unsalted butter then you will need to add ¼ tsp salt.
Chocolate
Can use chocolate chips or chunks. I prefer using chunks. At the time of redoing the post, I used Lindt 80% Dark Chocolate. I cut the chocolate into chunks. I would recommend using dark chocolate as milk chocolate will make the cookies a bit more sweet.
Baking Powder
As the leavening agent. Measure the baking powder properly using a measuring 1 tsp spoon. Scoop up the baking powder with the spoon. Using the side blade of the knife, skim off the excess powder to get a level tsp.
Sugars
Here will we be using both soft brown sugar and a bit of the white granulated sugar.
Plain Yogurt
Make sure the yogurt is thick and not sour. Must not be watery. If you don’t want to use yogurt, replace it with 1 large egg.
Orange Zest
I love the flavour combination of beetroot, chocolate and orange. Therefore, I add orange zest. If you don’t have any, add vanilla extract.
Milk |Orange Juice
You may not require the milk or orange juice. It all depends on how thick or thin the beetroot puree is. Best to add at the end as that way you will know whether you require the extra liquid or not.
BEETROOT CHOCOLATE CHIP COOKIES
Ingredients
- ¼-⅓ cup beetroot puree cooked thick
- 1 cup all purpose flour
- 3 cup oats
- 1 tsp baking powder
- 100 g chocolate chips approx. 1 cup
- 100 g soft salted butter
- ½ -⅔ cup brown sugar
- ¼ cup white sugar
- ¼ cup plain yogurt thick
- 1 tbsp orange zest
- 1-2 tbsp milk
Instructions
- Preheat the oven to 180°C.
- Sieve the flour and baking powder.
- Add the oats and chocolate chips. Mix it well.
- In a big bowl add the butter and both the sugars. Cream the mixture till it is creamy and fluffy.
- Add grated orange rind, yogurt and pureed beetroot. Whip to mix well.
- Add the flour mixture. Mix it well.
- Grease the baking trays or line them with parchment paper.
- Allow the dough to rest for 10 minutes.
- Take about a tablespoonful of the batter and roll it into a ball. If the dough sticks to your hands, lightly grease them with some butter.
- Place it on the baking tray and flatten it slightly.
- Repeat the above step with the remaining batter. Place the rolled batter an inch apart.
- Bake in the hot oven for 15 to 20 minutes. I like to bake them for 15 minutes so that the inside remains soft while the cookies from outside are crisp.
- Remove the tray from the oven. Leave the cookies on the tray for 2 to 3 minutes. Remove them from the tray and place them on a wire rack to cool.
- Store them in an airtight container. Stays fresh for about a week.
- Serve beetroot chocolate chip cookies with some tea, coffee or milk.
Notes
- These cookies are not like the regular crispy crunchy type. They have a cake like texture because of the amount of oats used and the quantity of butter is less.
- If you find them too soft, then leave them in the oven at 150°C for 5 minutes.
- You can use 1 egg instead of the plain yogurt.
- Add some nuts or dried fruit instead of chocolate chips. Or use a mixture of nuts, chocolate chips and dried fruit like raisins, cranberries, goji berries, etc.
- If the beetroot puree is watery you may not need to add some liquid like milk or orange juice.

Thanks Archana. Some supermarkets don’t sell beetroot puree but they do sell cooked beetroot which usually is preserved in vinegar.
