What is a Marble Cake?

When two colored cake batter is put in a cake tin in a random manner and baked it creates a marble effect. Marble Cake in German is called Marmorkuchen and originated in Germany in the 19th Century.

Why an Eggless Marble Cake?

While I personally prefer cakes with eggs as the texture and softness turns out so different compared to eggless versions, I tend to bake several eggless cakes as most of my family members don’t eat eggs. Baking an eggless cake is not difficult at all.

There are several main ingredients that are used to bake an eggless cake.

  • Yogurt:

Yogurt adds softness to the cake and when it reacts with a baking agent, it creates tiny bubbles which adds the unique spongy kind of texture.  Orange Cranberry Muffins are made using yogurt. The texture of the muffins or cakes comes out really well with yogurt. Also the bakes tend to be soft but not doughy at all.

  • Condensed Milk:

Condensed milk makes the cake soft, moist, adds flavour and gives a nice light golden colour to the crust. I’ve used condensed milk to bake an eggless upside down pineapple cake.

  • Over ripe bananas:

Over ripe bananas are mashed and used to bake an eggless cake. Over ripe bananas are naturally sweet, so add sweetness and moisture to the cake. The Eggless Banana Walnut Bread I bake, usually tastes much better the next day.

  • Vinegar:

A good quality vinegar together with baking agent added to the cake batter, creates tiny air bubbles which results in a soft spongy texture. Vinegar used to make eggless brownies makes the cake spongy.

  • Flaxseed powder:

Mixed in the ratio of 1 tbsp flaxseed powder to 3 tbsp water, replaces egg well. The mixture is usually allowed to rest for 15-20 minutes before adding to the batter.

  • Chia Seeds:

My friend Swaty uses chia seeds soaked in water till it becomes gelatinous and then adds that to her batter. Check out how beautifully her Eggless Blondies have turned out.

  • Apple puree:

Is also used to make an eggless cake. The advantage of using apple puree over banana is that it doesn’t add a strong flavor to the cake but adds moisture.

  • Buttermilk:

Buttermilk combined with any acidic substance like lemon and baking agents will result in creating tiny air bubbles, thus giving the cake a good crumb. Sapana has used buttermilk for her Lemon Buttermilk Cake.

My favorite is the recipe of eggless chocolate truffle cake a yogurt based cake, whereby I use the basic cake recipe to create different variations.

How to create the Marble Effect?

  • The easiest way is to add blobs of the two colored batter in an alternate manner, e.g. if using a loaf tin, spoon the white and next to the chocolate one. Then second line alternate with chocolate and white.
  • Add randomly the two different batters and then swirl it with the help of a chopstick or fork in a wavy pattern.
  • Third which requires patience but looks so beautiful is the way Poonam has baked her Zebra Cake.

What do I bake Marble Cake in?

Use a round, square or loaf tin as I have. Alternately make them into muffins the way Narmadha has. You can use a bundt pan too. I used a mini bundt pan to bake Mango marble mini bundt cakes.

How to enjoy Marble Banana Cake

Enjoy a slice or two with tea or coffee. Serve it with some hot custard or relish it some vanilla ice cream.

Dietary Tips:

  • For a vegan version replace the dairy yogurt with vegan yogurt.
  • Ideal for those who do not eat eggs.

MARBLE BANANA CAKE, EGGLESS

1¼ cup all purpose flour or wheat flour

1 cup over ripe mashed banana (2 large or 3 medium bananas)

½ – ¾ cup brown sugar

1 tsp baking powder

½ tsp baking soda (soda bicarbonate)

¼ tsp salt

¼ cup oil

2 tbsp cocoa powder

1 tsp grated orange rind (optional)

2 tbsp milk or fresh orange juice

¼ cup plain yogurt

  1. Preheat the oven to 180°C.
  2. Grease and line or dust a loaf tin (small) or a square tin 6″X 6″.
  3. Sift flour, salt, baking powder and baking soda together.
  4. In another bowl add sugar, oil, mashed banana, juice or milk and yogurt.
  5. Whisk it properly till the oil is incorporated into the liquids.
  6. Add orange rind and mix well.
  7. Add the flour mixture and fold in the flour. Do not over mix.
  8. Divide the batter into two parts.
  9. To one part add cocoa powder and mix well. You may need to add 1-2 tbsp of water.
  10. Place alternate blobs of the white and brown batter using a spoon.
  11. Use a chopstick or skewer to create swirls if you like. I left mine in blobs.
  12. Bake the cake for 25-30 minutes or till the top turns golden brown.
  13. Insert a toothpick into the centre of the cake. If it comes out clean then the cake is done.
  14. Take the cake out of the oven and let it cool in the tin for 10 minutes.
  15. Slowly remove the cake from the tin and let it cool completely on a wire rack.

Tips:

  • Can replace the orange rind with vanilla extract.
  • Add mint essence and green colour to make a mint and chocolate cake.
  • If you do not have parchment paper to line the tin then grease it lightly with oil or butter. Add a tbsp of flour. Move the tin in all different directions so that the flour can coat the tin.

        Marble cakes are my favorite. The beautiful pattern takes the looks of cake to a notch higher. Addition of orange juice and zest must have made this cake so much more flavourful.

    What a beautiful loaf of cake this is and I am in love with all the flavors that goes into this cake. Cocoa and orange goes so well together and you have proved that egg less cakes can have amazing texture.

    This is a beautiful cake and tastes awesome, I have made it a couple of times. I love the addition of banana to it, it gives a soft texture.
