What is Chocolate Pistachio Fudge?

A fudge is a crumbly or chewy sweet made from sugar, milk or cream and butter. They are mixed and cooked over low heat, stirring it all the time till it thickens to a soft ball consistency. When you add chocolate to it is called a chocolate fudge. Chocolate fudge can be plain or with nuts, seeds, dried fruits of your choice.

A Chocoholic

Alright, finally admitting to the world that I’m a chocoholic. I love all kinds of chocolates, milk, dark or white. Usually lunch or dinner ends with a small piece of chocolate. Normally, I just buy chocolate from the supermarket but once in a while I get in the mood to make chocolate at home. Being a chocoholic, I have quite a few chocolate recipes on my blog. You’ve really got to try my Bombay mix/Namkeen Chocolate Bark or try making Chocolate Medallions for a party. Diwali time means that I usually make Coconut Chocolate to give as gifts. If you’re looking for chocolate with some exotic flavour then Cardamom Chocolate Fudge is just the right one. Ever since my sister in law learnt how to make No Bake Chocolate Swiss roll from me, it features at every dinner gathering she has at home.

Nigella Lawson Fan

Its when I was watching Nigella Lawson cookery show, I remembered that I’ve jotted down a chocolate recipe from her previous show. I love the way she makes cooking look so effortless. Once the ingredients are at hand it is not a chore but a delight. Nigella Lawson has her own style and mannerism which is very endearing. So, I decided to try out her chocolate fudge recipe. Melt in the mouth type and very yummy. On the list yet to try from her recipes is Bar Nuts and Ginger and Walnut Carrot Cake. Just writing about it is making my mouth water. Okay, wait a second just quickly going to the fridge. Right, I am back with my mouth full with a piece of the chocolate pistachio fudge. yuummmm!

Can you replace the pistachios?

Yes you can replace them with other nuts of your choice, seeds and dried fruits like cranberries, raisins, dried blueberries, etc.  Use a mixture of nuts if you like.

Chocolate Pistachio Fudge

I find that using sweetened condensed milk to make this delicious chocolate pistachio fudge so easy. Just mix the ingredients except the pistachios and stir over low to medium heat till it all comes together leaving the sides of the pan. Either pour it in a lined tray or roll into balls. Truthfully, I find rolling them into balls so much easier and they look cute too.

Reasons to make Chocolate Pistachio Fudge

A chocoholic certainly needs no excuse to make  melt in the mouth fudge. However, they make an ideal gift idea for occasions be it festivals like Diwali, Christmas, Eid, Easter, etc. or for occasions like weddings, birthdays, anniversaries, etc. Serve them as dessert at a party or make them as favors for a special party. Go on I know you’re tempted to try out the recipe.

CHOCOLATE PISTACHIO FUDGE

Recipe Source : Nigella Lawson Cookery Show

Makes:

350g dark chocolate (minimum 70% cocoa solids)

1(397g) can sweet condensed milk

2 tbsps butter

1cup pistachios

extra butter for rubbing/greasing

  1. Chop the chocolate into small pieces.
  2. Toast the pistachios lightly in a pan. Cut the pistachios into halves.
  3. Put the chocolate, condensed milk  and butter into a heavy bottomed pan.
  4. Melt the chocolate over low heat stirring the mixture all the time.
  5. Its done when the mixture comes away from the sides of the pan and comes into a ball.
  6. Add the nuts and mix well. Take the pan off the heat.
  7. Pour the mixture into a 11″ X 8″ lined tray.
  8. Smoothen the top with a spatula.
  9. Let the fudge cool. Refrigerate it till it sets. Cut into square pieces. The size depends on you.
  10. Alternately, let the fudge cool down a bit and then take a tablespoonful and roll into balls.
  11. Store it in the fridge in a container.

Tips:

  • Make sure you line the tray with foil or greaseproof paper. Rub butter over it lightly.
  • You can use a mixture of dark and milk chocolate. Personally, I like to use only dark chocolate as the bitterness gets off set by the sugar in the condensed milk.
  • You may not get clean cut squares as this fudge is soft.
  • If the weather is hot, then put the fudge in the fridge to set.
  • Roll the balls in chopped nuts, powdered nuts, seeds, chocolate sprinkles or cocoa powder.

    this chocolate fudge so yummy. Love the addition of pistachio as it gives this beautiful pop of color to that dark brown color..

    Wow.. they look super I prefer the round ones. Easy to eat and serve .I usually make with dates but have never tried with chocolate
